I stumbled across vJoy while looking for a solution to visualize/log the Joystick input while using a flight-simulator. It seems to me that I can meet my requirement with vJoy, but maybe somebody can comment?
What I want to do: I am using a flight simulator (Condor) with a SidewWnder 2 joystick and some pedals. To train rudder/aileron coordination I would like to visualize the pedal input and the x-Axis input of the joystick in a two-dimensional display WHILE flying with the simulator. I would also like to record this data for later analysis. It appears to me, that this should be achievable by programming some additional module to vJoy?

You might use vJoy for monitoring but this is not really what it is meant for. You will have to write a 'Feeder' that takes data from the pedals and X-Axis inputs, and feed vJoy with the data without doing anything. The feeder may be written so it records the data.

vJoy cannot monitor physical sticks.
